Sugar & Flour Free Black Bean Brownie

brownie 1My entire life I’ve been a savory person…until recently. Cakes & slices started turning up more frequently around the office; and I began indulging more frequently around the office. Fast forward a month and I have become a full blown, self-diagnosed sweet-aholic. To the point where I feel like I should reward myself after every healthy meal with something sweet. Sweets never used to appeal to me, so I decided to try and kick this sugar addiction. As of Monday I went cold turkey – no sweets for 10 days.  Wednesday night I was craving chocolate in a bad way, so I created these black bean ‘brownies’ – sugarless and wheat free. These guilt-free ‘treats’ hit the spot. By Friday the tray was completely empty and the man asked me to make a second batch. Imitation “Sweet” Success.

Ingredients:

  • 1 x can black beans rinsed & drainedBrownie 2
  • 1 x banana
  • 3 x tbsp raw cocao (from health food store)
  • 3 x all natural, no sugar peanut butter
  • 3 x tbsp coconut oil
  • 1.5 x teas vanilla
  • 1 x tsp baking powder
  • 1 x egg
  • Pinch of salt

Directions

  • Mix all the ingredients together (mashing the beans)
  • Pour in baking pan and smooth top
  • Sprinkle desired topping (I used coconut and cocao nibs – walnuts would be delicious too)
  • Cook for 25-30 minutes at 180 degrees celcius
  • Store brownies in fridge
