Healthy Prawn & Vegetable Stir-fry with garlic, ginger & chilli

Let me set the backdrop for this dish: It was a cold, rainy ‘winter’ night in Australia. I was at home for the evening and had a pantry full of vegetables that I felt obligated to eat (they were close to going off).  I felt a head cold coming on, so I was feeling particularly sooky and was craving something warm & hearty without breaking the diet.  I decided to create a dish pumped with garlic, ginger and veggies.  Enter this delicious prawn & veggie stir fry .  I marinated the prawns in garlic, ginger, chilli & lime and they turned out delightful!  On top of the prawns & vegetables, I added some ‘Slim Noodles’ to make it feel a bit naughty. StirfryIngredients (for 1 serve)

  • 100g green prawns
  • 3 x garlic cloves (minced)
  • 1/2 red chilli (minced) I like it hot – so adjust to your preference.
  • 1 tsp grated ginger
  • Juice & zest of 1lime
  • 2 tsp sesame oil
  • 1/2 red capsicum/pepper sliced into stips
  • 1/2 cup broccoli chopped
  • 1/4 brown onion diced
  • Slim Noodles (wok ready variety) I used 1/2 a package
  • Handful of baby spinach

Directions

  • Clean & prepare prawns (deshell and remove tail and ‘poop shoot’)
  • Mix half the garlic, 1 tsp of sesame oil, chilli, ginger & lime in a bowl. Add the prawns and marinate for 1 hour
  • Prepare Slim Noodles as per package directions
  • Heat remaining garlic and oil in a hot wok
  • Add onion and cook for 5 minutes or until tender
  • Add broccoli and red capsicum/pepper (stirring constantly)
  • Once the vegetables are tender, add the prawns & marinade
  • Just before serving, stir through the noodles & spinach
  • Serve with extra lime wedges
